Sanzen Junmai Ginjyo Genshu
＜Mellow banana and lactic acidity.
The aroma is of bananas and a hint of apple and a little bit of alcohol.
In the mouth, there is a rich sweetness of ripe banana and a slight acidity of lactic acid. The bitterness with a graininess and nuttiness that spreads slowly and gradually is also wonderful. Yummma!
Grain and nuttiness is something I sometimes get with classic sakes. But it is strange to feel it in such a modern sake. And this is so delicious.
The entrée here continues to be grilled Japanese pork loin marinated in miso. The sweet miso flavor plus the delicious fatty flavor of the meat is not overpowered by the sweetness and deliciousness of the meat. I am so happy!
If I were to use a Ghibli analogy, I would compare this to Arrietty, the main character in "Arrietty the Borrower. This is Arrietty at the beginning, before anything goes wrong. She is cute, energetic, cool, and seems to be living closer to nature than humans.
