Day 1 of opening it was fresh and tasted like blue banana, day 3 was a bit more mild, mellow, melon-like fruity. Delicious!
Note: On the 5th day the sweetness and fruitiness disappeared and the aftertaste became a bit harsh. Even though it's raw sake, does the taste change this fast with refrigeration?
