Sake brewing resumed in February 2023 after a dormant period in 2015. This time, Shinji Ogiwara, a brewer who runs a company selling amusement platform products, and Yuki Kurihara, a toji who was engaged in sake brewing for 7 years at Hakurei Sake Brewery, were there.

This is a brand that originally existed, but this sake seems to be unreleased. It has a retro label and a very classical atmosphere, but it has a very fruity acidity.
Yamazanzo Junmai Daiginjo Unfiltered Namaeshiki
Slightly gassy, slightly sweet, and refreshingly sweet. Slightly modern. A delicious sake that disappears quickly.
Yamazami Shisui Junmai Daiginjo Unfiltered Namaeshiki
It has a fruity, refreshing sweet and sour taste with a modern feel.
The toji seemed to be very concerned about the reaction of the customers since he brought a junmai-daiginjo class sake, but it was very tasty.
