Today's sake is Kido's Agara Nama-no-Mazake.
It is a low-polishing sake made from Yamadanishiki grown in their own rice fields.
Heiwa Shuzo no longer makes Yamahai sake, so we brought it back from the Heiwa Shuzo store in Wakayama City Station.
It is a 27BY sake, which means it is 7 years old and is a raw sake!
The color is a slightly light amber.
First, I drank it cold. It has a slightly thickened mouthfeel. It has a strong alcohol taste.
The taste has a nutty aroma with plenty of umami, and it also has the acidity and freshness typical of Yamahai, and you can enjoy the lingering umami in the latter half of the bottle. It is delicious as it is!
When warmed up, the fragrance with a sense of maturity is softened and the umami is enhanced, making it good as a heated sake. When warmed, the spiciness in the latter half of the bottle is very effective.
It is delicious both cold and hot.
You can't really taste the seven years of maturity, but it has a classic flavor, and you can taste a lot of rice flavor without any peculiarities.
It is a completely different taste from the usual Kido, but it is a taste that relaxes the heart. It was the right decision to bring it home ^ ^v
