This year, too, a bottle as light as the "wind" arrived from a small brewery in Katsuura. As the name suggests, it has a pleasantly clear and refreshing taste, like a summer breeze blowing through the air from the moment you hold the glass in your hand. The aroma is soft and elegant, with a freshness like that of pears and white flowers. The acidity, which is unique to the sake's "ikuhashimoto" brewing method, is at the core, and the balance between the gentle sweetness and sharpness is exquisite. It also has a bubbly feeling that can only be achieved by direct bottling, and the gas that bursts with energy helps to reset your mind. While it has the quiet and beautiful outline typical of Narumi, this year's finish gives it a greater sense of depth. It is not simply a "summer sake," but a bottle that conveys the brewer's care and will.
