This is the first time since last July that I have been to Yamori.
I was looking forward to this year's event.
I quickly opened the bottle. As usual, it started with a "jouwer" and then a "ponk".
First, the aroma. Hmmm...the aroma is not as strong as I expected. Well, it's Junmai, so it's not that bad. I put it in my mouth thinking, "Well, it's Junmai, so it's not like this. First of all, I was surprised to find a freshness that I had never experienced before. Then, there was a big change in taste.
The taste is different from the rich, sweet and juicy taste of the past, with the sweetness being suppressed and the acidity standing out. From the middle to the latter half of the bottle, the bitterness comes in and disappears.
This is quite a shock to those who have been drinking it up until now.
Simply put, it has adapted to the trend. Personally, I prefer it as it was before. However, it gives the impression of being very hard just after opening the bottle, so I would like to enjoy it slowly.
