I am sorry to go on and on about the old days, but I used to be stationed in Hong Kong. Among the many Japanese restaurants in Hong Kong at that time, the "Doraku Chaya" was by far the best, and I loved their original "barrel sake".
The sake was imported from Kyoto and served in cedar casks, which smelled so good that I could drink as much as I wanted.
This Popular Ichi was given to me by my sister-in-law, and it has an aroma that suggests it must have been brewed in continuous contact with the wood. The taste is rounded and unrefined, but it seems honest and I like it.
I enjoyed the aroma of the wood as I wondered how the stubborn owner of the Doraku teahouse was doing, and wished I had asked him to sell me that barrel of sake.
