I purchased this sake when I visited Fukushima Prefecture.
It is a Popular Ichigold Popular Junmai Daiginjo, a sake brewed in Nihonmatsu City, Fukushima Prefecture.
It has a gorgeous aroma, elegant and subtle sweetness, and spiciness. It also has an aroma that only a wooden vat can give.
We prefer it when it is slightly warmer than when it is cooled down.
The day after the bottle was opened, the aroma of koji, sweetness, and especially sourness increased, and the overall balance shifted in the direction we liked.
