Niseko Brewery seems to brew sake using rice produced in Hokkaido. The sake we were served this time also seems to be brewed using Hokkaido's "Comet" rice, which is suitable for sake brewing.
It has a fruity aroma reminiscent of white wine, muscatel, and banana, with a hint of grain. The taste was slightly sweet, with a little sourness and umami, and a slightly stronger alcohol taste. Overall, the taste was refreshing. It was a treat.
