It has been a long time since I have been to Daishinshu.
This time, too, we received a gift.
The rice polishing ratio and other details are undisclosed, but it seems to be a so-called "domained" sake.
It is a fire-aged type, so the bottle was opened quietly, but this is no different from usual.
The aroma is like ripe green apples.
The sweetness comes first, but after just a moment the pungency and bitterness arrive. After the bitterness disappears, the pungency persists. The pungency lingers for a while. My impression is that it is mellow, umami, and dry.
The sake is best enjoyed with vegetables, and with meat. It may not be suitable for fish.
Recently, I've been making a lot of mistakes with sake, so I'm happy to drink it with satisfaction.
