This is a limited edition of Junmai Daiginjo made with Akaban Omachi under the condition of 13% alcohol. It is made in competition with Hiroshima's Ago no Tsuki.
Immediately after opening the bottle, the taste is clear, well-balanced, and elegant, but as the day goes on, the umami comes in as if it has been remembered, and the Omachi-like flavor seems to have opened up. However, since the base has the aforementioned elegance, I felt that the way the umami rose stood out.
It's a special edition with a different feel than usual.
