Today's sake is from Tamagawa in Kyotango, Kyoto. It is a raw unfiltered sake even though it is Yamahai. ‼️ And the sake rice is Omachi. ‼️ I have never heard of such a combination. ‼️
Yamahai is a difficult sake to make. What does it mean to use 100% Omachi, which is a very suitable rice for sake brewing,⁉️ and also a very good rice for sake brewing,⁉️?
The aroma is very much like a sake ❗️ aroma ‼️
When you take a sip, you can feel the dense texture on your tongue. The unique acidity of Yamahai can be felt in the mouth with the richness of the original sake. ‼️
