This sake is from Sabae City, Fukui Prefecture.
The city is home to the world's three largest eyeglass production centers (Italy-China-Sabae) and the hidden Mecca for live idol shows, Sun Dome Fukui.
I have lived in Sabae for about three years and am still a fan of Sabae glasses (although my current glasses are from Sabae Outlet).
The word "kasandome" is said to mean the gorgeous candlelight that illuminates the wedding table.
A far cry from the Hayaseura I saw earlier, but powerful!
Slightly yellow in color, it has a twisted aroma typical of local old-fashioned sake, an alcoholic flavor typical of honjozo, and a full-bodied sweetness that follows the flavor of the entrée like a secondary melody.
How about if you warm it up?
The sweetness comes out with a sharp taste, the twisted aroma becomes a little stronger, and the lactic acid bacteria flavor (not so much sourness) is moist and disappears after 5 seconds.

The sweetness has a slightly stronger impact, and it wraps up the oiliness and bitterness of wild vegetable tempura well.
Well, it is hard to say whether it is good at room temperature or warmed up.
