Fukuhara-san's hanpukai I let it sit for half a year. We enjoyed it with the lean beef tataki we got at the Shinagawa Meat Market Festival, Chawesen night flavor, salad, and soup. Melon aroma, a little sticky sweetness to a short lingering sourness, and a good sharpness. The best match was kinpira, a dish of lotus root. Jikin is a delicious sake.
