I bought this Sentori at Saito Sake Shop in Tochigi Prefecture when I stopped by on my way home for a Buddhist memorial service last month. I hadn't had it for a while, and I didn't realize there was such a thing as "Edo-style" sake.
It has a rich sweet aroma like muskmelon. The acidity is outstanding and very easy to drink. It has a slight sizzle even when heated. It is a wonder that it has a modern taste despite being made by an old method. And the mentality of such a well-known and popular brewery to introduce changes is amazing.
