I've recently become a fan of Suminoe and collect all the ones I can find on the Internet. This is a high-end sake made from Yamadanishiki produced in Hyogo Prefecture.
The aroma is gorgeous and fruity, with hints of white peaches. The taste is broad, as is typical of Yamadanishiki, but it has a gentle and beautiful impression, with a neat structure that is typical of Suminoe. Personally, I prefer the Nakadare, but it is a great sake in the sense that it shows the brewery's capabilities.
Pairing: White fish sashimi, sushi, chilled soba noodles, and boiled hamo (pike conger).
