The long awaited Shinjo Neo Classic. What a first and hiyaoroshi!
I was excited to open the bottle!
The aroma doesn't seem to rise much.
The rice is 80% polished and the taste is robust? I thought so. It has a light umami and a fresh acidity like a makami-style wine 😭Yumami!
I kept it carefully refrigerated, but upon closer inspection, I found that it was stored in a cool, dark place.
I wonder if it can be kept cold or at room temperature? Let's take it out of the fridge and leave it there: ☺️
Room temperature is umami acid! I felt the umami flavor was outstanding.
