Yesterday, after drinking Toyobai, I was curious about another Toyobai. So I decided to have the Junmai Ginjo. The aroma was coming out of the sake cup. Today's sake is also a Toyo Sakai rice. It is crisp with good acidity and umami, and has a pleasant lingering aftertaste. It was a little less floral than the Rainbow, but it was very robust. It went perfectly with miso soup with sea bream. Toyobai rice is the blood of Gohyakumangoku rice. It was a precious rice used only at this brewery.
