It's delicious! It has a slight sweetness and a gentle sourness that lingers in the aftertaste. Overall, it's gentle and well-balanced!
I love the freshness and sometimes wild flavor of unpasteurized sake, but this is the cohesiveness and calmness that comes from hiring. But the more you drink, the more you notice the depth of flavor.
I like to chill it well and drink it in my room while relaxing. (I'm lucky to be able to do that...)
