The rice used is Asahi No. 4 from Fushimi, Kyoto, which I had never heard of before. The person in charge of my business partner gave me a bottle. I opened the bottle on an ordinary Tuesday, thinking it was time to drink it. It's Fushimi, the label is cool, and I'm sure it will be delicious, so I take a sip. It was neither hot nor sweet, neither refreshing nor rich, and I thought it was a middle-of-the-road, expressionless sake, but then I saw a description on the back label that seemed to describe it. However, as I drank more, the flavor increased. It seems to be a type of sake that comes on later. I am looking forward to a rematch tomorrow.
