On the last day of the Christmas holiday🎄, we had Zoka-san's dry Shiboritate from Wakayama. It has the umami of nama-shu (raw sake) and the sharpness of dryness, and went great with fish. I served it with my favorite Maru-Aji sashimi (half of the fish was seared). (It was a great marriage 😋👍.
