もよもよ
We had Sakura-ame, a raw sake from Tenyumi. This sake was brewed by Shinri, the former toji of Tohoku Izumi. The other sakes in the Tenyumi series were also delicious, so we have high expectations for this one.
The aroma was refreshingly fruity with a sourness, but when we drank it, we found it to be quite sticky and sweet. There is a slight sourness, and I think it has a kind of rich muscat flavor.
It would be interesting to drink this type of sake with gratin or other white sauces. It has a strong umami flavor, so I feel it will not be defeated by the food.
