It has been a long time since I have had a Niimasa-san.
It was served in a flax cat glass that I was lucky enough to purchase at the NEXT5 event.
I have had Flax Cat before, but this sparkling version has a taste that is hard to believe it is sake.
The fruity taste of the citric acid from the white malted rice and the No. 6 yeast makes it taste like champagne.
I had it with Western food, and it went very well with it.
The taste is impressive and the mouthfeel is so good that the word "fruity" is not enough to describe it, and the taste of the sake can be felt in the shwashiness.
