Kaede
Unfiltered raw sake. Modern Yamahai.
Slightly carbonated, with a gentle bitterness that quickly dissipates to reveal a refreshing sweetness at the end. It is fresh and seems to be popular with women because it is a nama-shu. Even if it gets a little lukewarm, the initial impact only increases slightly, and the aftertaste remains the same, making it easy to drink. It can be enjoyed on its own without any accompaniments.
The sake rice, Ishikawamon, is apparently quite difficult to handle. It's amazing.
