This one had a very peculiar taste and was brewed at high temperature using one-stage Yamahai brewing!
High-temperature Yamahai one-stage brewing is a rare method in which rice, rice malt, and brewing water are brewed at a high temperature of 55 degrees Celsius, to which lactic acid bacteria and yeast are added.
The golden color of the sake has a matured feeling even before the opening of the bottle, but it has a characteristic sourness when you take a sip, and when sweetness is added, you can enjoy it on your tongue.
This one seems to be good on the rocks and chilled to a crisp!
You can enjoy it like a white wine!
