This is the first time I have had sake from Tomikunishiki. They are a Junmai brewery in Harima that uses all local rice and brews only junmai-zukuri sake 🌾They are a brewery that takes the high road: ☺️
Nama sake made with extra fine Aizan, I'm drawn to this one just by the specs ✨.
Rich ginjo aroma including the gorgeousness of Aizan.
There is a refreshing sweetness on the palate, followed by a firm umami that spreads. It has a minerality and good acidity, and while it has umami, it is not too heavy, making it easy to drink. The aroma and mellow flavor typical of nama-hashiroshi are also good.
The aftertaste has the alcohol and slight bitterness typical of nama sake.
