Yamashiroya, which I enjoyed drinking before. I was caught by the brightness of the bottle and bought it. The aroma is mild. The strong acidity, which is typical of a sake made from the traditional sake yeast, can be felt along with the clear umami. It is a refreshing sake that is not tiring to drink, as if it were a mealtime sake, and yet it is enjoyable to drink because it has the umami of a daiginjo. Yamashiroya has a sense of stability. 7.5
