100% Aizan is used. When you drink it, you can clearly see that it is made from the original sake yeast. It has a strong umami flavor. The flavor changes further at room temperature. The taste changes even more when it is at room temperature, and it becomes more viscous. This is the first time I have tasted it. It was like Hanaboe at other breweries.
