This is also a drink at an izakaya. It's a sake from Nara, made from pure rice, unfiltered, unpasteurized and unpasteurized. It was one of the brands I was interested in.
I was thinking that the rice is milled flat, so the yield is better than regular shavings. When I looked it up, I found out that they milled the regular rice into flat rice on a trial basis.
I'm thinking the slight carbonation is one of the characteristics. It is sweet, but I detected a slight sourness and sweetness like koji or amazake.
I don't think this is that strong of a sake drink either, so it's one I'd like people who don't like sake to try.
