It is dry with umami, but it is also light.
It is dry with a strong alcohol taste, but the balance of flavors leading up to it is exquisite.
Although it is a junmai daiginjo, it does not have a sweet taste, and is considered to be a good mid-meal sake.
I would like to try it with a variety of foods from now on.
(PS) There is a chocolate-like nuance in the attack. It is a dry sake with a subtle yet delicious flavor, and in the end I would like to have another bottle.
