Sake that tastes good after the first sip will become boring if you keep drinking it. On the other hand, sake that has a sharp aftertaste with a good flavor of rice will naturally make you drink more.
What is considered "delicious" is up to the individual, but I share the same feeling that one may want to drink dry sake after a long time of sweet sake.
However, when I am after a dry heated sake, I sometimes want to drink a cold sweet sake, so it may just be a luxury.

Sweetness and sourness that you feel in the back of your throat afterwards.
Delicious.
I am not confident that I can wait until it matures, though it says "as it matures".
