Like the Hakurakusei Junmai Daiginjo we had earlier, it has a beautiful sweetness, but I felt this one had a little more sweetness and acidity.
However, as one would expect from Hitakami, the sharpness is outstanding and it cuts through the fat of the fish.
I paired it with sashimi such as tuna and amberjack, and it was absolutely delicious.
I would definitely recommend this fish and hidakami.
