Takatsugu
Tetorigawa" has been on my mind recently. We opened the bottle without hesitation when we came across "Hiyoroshi", a "Yamahai-brewed" sake that we fell in love with when it was hot.
The hiyaoroshi has a mellow taste with a refreshing lactic acidity followed by a lingering rich umami aftertaste.
I suddenly thought of a marriage in my mind that would be irresistible when paired with a foil-baked salmon with lots of butter.
It is a wonderful bottle that becomes even more flavorful as it is served chilled or at higher temperatures. Delicious ‼️
