Overall 9 (out of 10) I registered on LINE when I visited Nishibori Brewery before. We were told that it was only for official LINE members and that it would be sold online. We are weak against "limited ‼️" type words, so we bought it without a second thought😅. The sake is "a punchy 'matured dry' ginjo-shu made by aging the unfiltered raw sake at ice temperature. Easy to enjoy as a food sake. We are told that it is "easy to enjoy as a food sake". It's delicious, but not something we've ever experienced 😋. It is indeed dry, but I can't describe it well, but I got the impression that it has a grain-like taste all rolled into one. I wonder if this is called aging? It is easy to drink because it is 17 degrees, but it is a little dangerous to drink it as a food wine. ⚠️ I had it chilled. I was impressed by the aroma.  -Aroma: Slightly cereal aroma  -Aroma: Slightly astringent Taste sensation The higher the number, the stronger the taste (5 is the maximum)  -Spiciness: 3 at the beginning → 1 in the aftertaste  -Sweetness: 0 at the beginning → 0 in the aftertaste  -Sourness: 0 at the beginning → 1 in the aftertaste  -Bitterness: 1 at the beginning → 1 lingering 1  -Astringency: 1 at the beginning → 1 lingering 1  -Rice flavor: 1 at the beginning → 1 lingering 1 Mouthfeel I felt】→3 Smaller number = light and smooth Bigger number = thicker

Very strange taste! It tastes like cheese, soy milk, miso soy sauce, fermented and aged on the tongue. Complex tastes like sourness, bitterness, and astringency are directly numbing! Today we had grilled meat, and it goes well with kimchi as an accompaniment: ‼️
