The homecoming is over and I'm back to work today. Let's go home early and have a drink with our ancestors. Nishiki no Mai is a sake made by Miyajima Sake Brewery, a Shinano-Nishiki brewery, as part of their project to support rice farmers. You can support rice farmers and drink sake brewed with their rice! I wonder if it's called "Kurafan return" nowadays. Junmai Daiginjo-genshu made from 42% Miyamanishiki rice polished without pesticides Yeast is 1801 Mellow sweetness after the capsule-like aroma. Clean aftertaste with no sourness or cloying taste. The bitterness, astringency, and dry taste, which become apparent when the sake is chewed well, are typical of Miyamanishiki. It is a fine sake that can be enjoyed by itself. I am sure that our ancestors must have enjoyed it.
