I received this as a return gift for my hometown tax payment. They use rice from the Ashi area of Showa Village. It is a Junmai Daiginjo with a rice polishing ratio of 50%. The yeast used is also Utsukushima Dream Yeast F7-01 from Showa Village! It is no exaggeration to say that we are getting Showamura (laugh)! It is so soft and refreshing that when you drink it, you may think it is water. It is so soft, refreshing, and easy to drink that you might chug it down in one gulp if you drink it as is. However, after that, a gentle sweetness of melon or banana spreads softly, and there is a sense of minerality, which lingers in the mouth for a long time. It is a very gentle sake. I paired it with sashimi, and it is a great match! I've been to the area before, but the fact that there is such a delicious sake makes me want to go there in person, and I would like to stay there if I had the chance!
