This is a concept sake brewed by the Yamano Sake Brewery of Katano Shikisabe, Osaka Prefecture, and distributed exclusively to a limited number of dealers as a challenge sake.
The first product is a 15% alcohol by volume sake brewed with Association No. 7 yeast (Masumi yeast) from Omachi rice grown in Okayama Prefecture and polished to 55%.
It has a sake degree of -10 and a high sugar content, etc., with an acidity of 1.9 and an amino acidity of 1.3, a status that seems to indicate some acidity as well.
The label is modern and stylish wine-like.
It is served cold.
I don't think it is because of the label, but the aroma is just grape. It has a pleasant ginjo aroma with a harmony of sweetness and acidity like Chardonnay or Sauvignon Blanc.
The appearance is clear.
In the mouth, it has a very smooth texture, with a fresh flavor that is a harmony of sweetness and acidity reminiscent of white wine, which spreads out softly and then quickly recedes, leaving the acidity behind and disappearing, leaving a slight koji acidity in the back mouth that is typical of sake.
If you drink it with your eyes closed, you might mistake it for a white wine until you feel the aftertaste. It is a juicy and refreshing sake.
It is said that the juiciness gradually increases after opening the bottle, so I will enjoy the change over time.
