Light on the palate, mild aroma.
Lightly matured rice. The acidity is strong.
When swallowed, it has an alcoholic taste.
Afterwards, sweetness comes in.
The salty taste of the shime saba (mackerel) goes well with the sake.
I feel that this is a sake with a good entrée.
I have to admit that many of the entrées at this restaurant are a bit salty these days.
