In the same Jikin category, the aroma is more subdued than that of Yamadanishiki, but the mouthfeel is similarly gorgeous and sweet.
It also has a little acidity reminiscent of citrus fruits.
However, it is not as sweet and flavorful as Yamadanishiki, and the well-balanced changes in flavor can be enjoyed.
The bitterness appears in the back of the mouth, and while some sweetness and acidity remain, the taste is light and sharp.
Personally, I prefer the juicier Yamadanishiki (or maybe it's the difference between the raw and hi-irin versions), but the Hachitanishiki is superior when served with a meal!
It has a high degree of perfection.
