Urakasumi, from Shiogama City, Miyagi Prefecture, is a standard sake. It gives the impression of being dry, but because it is a fresh, unpasteurized sake, it has a mild dryness. It has a refreshing sweetness from the rice and is well-balanced, so it would go well with anything as a mid-meal sake. I wanted to pair it with fish dishes, but today I paired it with homemade beef tendon stew. But it was a perfect match and delicious.
