The top clear liquid immediately after opening the bottle is like a clear, slightly dry white wine, and from the latter half, the sweet umami taste of the rice is gradually coming out.
As you drink the second and third glasses, the oriji is naturally mixed in and a soft umami bitterness emerges.
When the oriji is mixed with the sake, a gentle aroma of koji (malted rice) also comes out, and the complex combination of sweetness, umami, bitterness, and astringency makes you want another cup.
After a few days, it starts to have a pineapple flavor 🍍.
