ジョナジョナSake made with Omachi from the Odayaka series. A sword is drawn on a frog, which looks not so calm.
It has a strong koji aroma. The sweetness is rather subdued with a koji flavor, and complex acidity and umami come in around the time of the carbonic acidity. It leaves a slightly astringent taste and has a refreshing aftertaste.
It is certainly more like a sword than a junmai sake. Come to think of it, this is the first time I've tasted Shizugen... I'd like to compare them.
