Collage carefully stored in the cellar
Almost clear and pale yellow
The aroma is very fresh and clean.
Serve well chilled
The first taste is a clear, subtle sweetness, followed by a slightly stronger bitterness. No acidity.
Flavor is reminiscent of melons that have only been harvested a few days and have not yet reached full ripeness.
Not quite dry, but mature enough for those who like their sake juicy.
It can be enjoyed on its own, but it would be great with salted tempura or other dishes with less peculiar flavors.
It would be a shame to serve it with dishes such as salted squid, as the aroma would be masked.
