It's a Junmai Ginjo with a masculine profile and umami flavor that is refreshingly dry.
It's easy to pair with a variety of foods as a gourmet sake.
Sakaeizumi was produced by Rishiri Shuzo (1932-73), which was the only sake brewery on Rishiri Island. The brand was popular because it used "Amaurosensui," spring water from Rishiri Fuji Town, which was selected as one of the 100 best waters in Japan. This time, Supres (Sapporo), a company that supports the management of hometown taxation, has revived Eizumi by commissioning Tanaka Shuzo to produce it.
