I bought this at last year's Fukushima festival. We were randomly sent a bottle of Fukushima sake, and that's where I came across this "Jinya"!
I've never seen this brand before, but it's a sake from Shirakawa, the gateway to Fukushima🧐.
When I opened the bottle and poured it, I smelled a lactic acid aroma with a strong acidity like yogurt. It has a strong lactic acid aroma with a yogurt-like acidity. The viscosity is also strong because it has been aged.
It's also very smooth on the palate, but the acidity is strong. After the acidity stimulates the tongue and refreshes it, the umami comes.
The aroma in the background is sweet and full, like banana and yogurt🍌.
In the second half, the acidity becomes stronger again, and the aftertaste is similar to citrus.
I felt that it tasted like a mix of "hiyaoroshi" and "namaishimoto".
It's thick, but with a refreshing umami taste. This is another interesting sake that I found!
