The third brew of Akishika Shugyo is Nosefuku.
Nose is where Akirika Sake Brewery is located, but it is on the most northwestern side of Osaka, a place with peaceful satoyama that is like a different world even though it is in Osaka.
It is a place where I personally love Lake Chimei campsite and go day camping there on weekends when I don't have plans and there is space. Too much local stuff, right?
The sake I just ordered was this season's sake, so I had it cold, but Akizuka is a warmed sake 👍, so I ordered two more glasses of heated sake, one gentle and the other firm.
It has a light amber color and a caramelized aroma with a sense of maturity.
When sipped at room temperature, it has a deep flavor and feels as if you are eating rice.
Even when heated, the sweetness is not felt, and the umami flavor spreads juicily among the acidity.
I think I prefer it warmed up or cooled down to balance the gentle flavor. Although it is called gentle, it is more than enough flavorful and delicious.
