The rice used is Fukushima Prefecture's "Fukunohana" rice suitable for sake brewing. As soon as you put it in your mouth, the sourness comes in spurts. The sake is not that sweet, but it feels sweet. The aftertaste is dry and refreshing. It leaves an astringent taste like after eating a pineapple. This may be the first time I have ever felt such a clear taste of fresh pineapple.
