I bought this sake at the foot of Kumamoto Castle. I was nervous because local sake like this can be a bit of a disappointment, but it was a very orthodox and stable junmai sake.
I paired it with the kaiseki cuisine at a hot spring ryokan, and it went perfectly with all of the dishes. It was especially good with fried and simmered flounder and takikomi gohan with seafood!
