Slightly sweet aroma of muscat and rice
The same slightly fruity aroma, full sweetness, and gentle umami of rice spread gradually with a subtle acidity, and a moderate bitterness, leaving a lingering sweetness and a lingering sweetness that quickly fades away.
It is an elegant and beautiful sake with a good balance of body. It goes well with meals and is also delicious on its own.
It went well with mapo doufu (a little spicy, made with Chen Mao Doufu stock from my favorite Cardi's) and suu gyoza (dumplings).
It also went well with ginkgo nuts with mayo and soy sauce, black rump steak, and pasta with scallops and shrimp (salted lemon garlic).

Hi Masaaki Sapporo!
I had a bottle of raw sake a few years ago and it was a beautiful sake with a strong muscat flavor 🤗I'm going to take a crack at matching it with mapo doufu and dumplings.
