This is my first Chichibu Nishiki. It was purchased at a premium outlet in Hanazono, Fukaya City, Saitama Prefecture. Is it an autumn sake?
The aroma of muscat is refreshing. The sweetness and umami give it drinkability and the best part of sake, the acidity gives it fruitiness, the acidity gives it sharpness, and the bitterness gives it depth.
The sweetness, umami, acidity, and bitterness each appear and disappear in a moderate and elegant manner. It is a beautiful sake with a very high level of quality. It can be served with a wide range of foods, including salted kelp with sesame oil on cold tofu, kakiage (deep fried shrimp and green onion), red tuna, pork marinated in miso, vinegared ume plum and molokheiya, grilled shishito and bonjiri, all of which go well with this sake!
I think it can be used like a dry white wine, but with a hint of banana in the aroma, it has a strong sake character.
To be honest, it's not very flashy at first sip. It has a classy and drinkable quality that allows you to linger over a meal or snacks.
I sometimes miss out on drinks that cost over 2,000 yen, and I think that 2,300 yen is a bit expensive. However, I think it is a surprisingly satisfying sake to drink over a few days.
